Bok Choy: (Pak Choi) is a very popular Asian Green found in grocery stores. You can grow; Pak Choi, Purple Boy Choy, Baby Bok Choy etc. There are 2 common types of BOK CHOY - 1. Larger White Stemmed 2. Smaller Green Stemmed “Shanghai” Both Types come in Baby Choi size. The smaller Baby Choy is tender and milder.

In the Bok Choy selection you can grow the Baby Bok Choy to the mature stage because they grow fast and stay small and tender. The designation of Baby Bok Choy is not a separate type but a size classification. These small, tender Chois can be eaten raw in salads.

Another Asian Green is the Water Spinach, a semi-aquatic spinach also referred to as a type of watercress. Water Spinach is a good source of Vitamins A, C and several B vitamins.
