WHAT FOODS ARE HIGHEST IN CAROTENOIDS ?

FIRST - what are carotenoids? Carotenoids are Naturally occurring Pigments in plants, algae, and bacteria.

Beta-Carotene, Lycopene, Lutein, Zeaxanthin, Alpha-Carotene

Our system emphasizes a small clean efficient system that doesn’t use pumps or large hydroponic systems - - - so that eliminates some of the foods that can be grown in our system indoors. We also have grown peppers, green beans cherry tomatoes small cucumbers, sweet potatoes, radishes, carrots, etc indoors using soil but found it was taking up to much space and was to “heavy” to move around and to “dirty” for our indoor area.

The foods you can grow indoors are the same foods that come up in most of these posts. Grow KALE, Grow SPINACH, yes even GROW TINY bite size Baby Carrots, Baby Turnips, Small Radishs with our system. We will show you in the”How To Series”.

The reason why we have not focused on growing some of the larger foods is because of the SPACE those plants need to produce their vegetables and the TIME to harvest is to long, in our opinion. We grew green bush beans successfully but the plants take up a lot of space and time required to get beans is approximately 50 to 60 days. Cherry tomatoes take up to 65 to 70 days to harvest. We have a small space to grow food. This site and system is designed for apartments, sunrooms, any space available in your home provided you add some grow lights and place plants in/near sunny windows is possible. After growing food indoors and working through the problems associated with larger vegetables we have focused on growing as many foods as possible that use the smaller varieties and we harvest at the “baby” leaf stage. When we devote space to cherry tomatoes, bush beans, and small peppers we can’t produce as many leafy greens - that is only because of our limited space for the indoor garden. Basically —- more space —- more veggies. Choose the top foods you enjoy and from those choices pick the top foods with the highest nutrient content.

FOODS HIGHEST IN BETA - CAROTENE

Kale - has the highest amount of carotenoids in the leafy greens category, 10625 mcg carotenoids per cup cooked

Romaine Lettuce - also high in carotenoids in the leafy greens category, 1637 mcg carotenoids per cup

Sweet Potatoes - #1 highest carotenoids for root vegetables, 23018 mcg carotenoids

Carrots - number #2 highest carotenoids for root vegetables, 10605 mcg carotenoids

Spinach - 1688 mcg of carotenoid

Red Bell Peppers - purchase a packet of small peppers to grow indoors, 2420 mcg carotenoids - (True Leaf Seeds -partnered with Mountain Valley Seeds / the company has a “SWEET MINI BELLE PEPPER SEED MIX ) — (Renee’s Garden Seeds sells a smaller pepper for containers “Container Sweet Peppers”)
